Pin 12 – It’s been a long time!!! – Crunchy Garam Masala Chickpeas

I know it has been way too long since my last post! Things were and still are a bit crazy around here, but I  found time to do a pin so I thought I’d take the time to blog about it as well.

This pin comes from Kelsey at Apple A Day.  I love chips so I’m always looking for a healthy crunchy alternative, this definitely fits the bill.  The only time I’ve had chickpeas is in hummus so I was looking forward to seeing what they’re like in a different form….they are yummy!

Super short ingredient list!

Rinse and drain the beans

Yum! I used a little less salt since the canned chickpeas I had were already salted and I added some chili powder for a little kick! 

Crunchy Garam Masala Chickpeas
from Clean Eating, April/May 2012

Ingredients:
3 c. cooked chickpeas OR
2 (15-oz.) cans unsalted chickpeas, rinsed and drained
2 TBSP olive oil
1/4 tsp. sea salt
1/2 tsp. garam masala

Directions:
1. Preheat oven to 400 degrees F.

2. In a medium bowl, toss chickpeas with olive oil. Spread chickpeas evenly over a baking sheet and bake until, stirring occasionally with a spatula, until very crisp, about 45 minutes.

3. Remove from oven and sprinkle with salt and garam masala. Serve warm or at room temperature. Keeps up to one week in an airtight container.

Pins 9,10,11 – Super Bowl Goodies!

Hope everyone who watched the Super Bowl enjoyed it.  While Kevin was finishing up his midterm, I snuck into the kitchen and made him some yummy goodies to enjoy during the game.

Pin 9 – Smores Cookie Bars

This pin comes from The Couponess.  Pretty easy recipe…the only thing I had trouble with is that it said you needed 8 chocolate bars, but I couldn’t squeeze 8 in!  Also, I think I figured out from looking at the original picture just now that instead of plain graham cracker crumbs on the top layer it should be the graham cracker mixture.

I love the way butter and sugar looks all whipped up…doesn’t taste too shabby either! lol.

Try not to eat all of this.

Tried to fit as much chocolate as I could without layering.

Pin 10 – Jalapeno Poppers

This pin is from Lisa Leake over at 100 Days of Real Food.  I’ve always wanted to try something like this…can’t beat a spicy, creamy, bacony combo!  They came out really nice.

Very few ingredients! I had some peach preserves in the basement so I added it for a nice sweet component.

Seed the jalapenos…my least favorite part.

Add cream cheese.

Add peach preserves.

Wrap with bacon!

So good!

Pin 11 – Pineapple Cheese Ball

A Super Bowl party wouldn’t be complete without a cheese ball! I usually make a cheeseball of green onions, cream cheese, and chipped beef.  This recipe is similar but I thought the added sweetness of the pineapple and the crunch of the nuts would be nice.  The pin comes from Chef-in-Training.  Super simple and super yummy!

Green onions, ham, cream cheese, and some powdered sugar.

That’s it!

Pin 8 – Extreme Gold Eyeliner

This pin I saw on a friend’s board and thought that I had to try it! I found some great gold liquid eyeliner on Amazon for $7.00. Some of the reviews mentioned that it was hard to get it off…but I didn’t have any problems and just used my regular face wash to take it off.

I didn’t have any black eyeliner (I usually wear brown) but I found some sparkly black eye shadow that worked just fine!

Pin 7 – Click

Pin 5 & 6 – How to Peel a Kiwi & Kiwi Pops

Yes, that’s right….2 pins in 1 post! 🙂  By the way, my post yesterday was perfect timing…apparently yesterday was National Popcorn Day (although I just searched and others are saying it was the 19th, oh well.)

So pin 5 is How to Peel a Kiwi this was really neat and I’d never thought of peeling a kiwi like this.  It comes from Jaden Hair over at Steamy Kitchen.  Basically all you do is cut off the ends of the kiwi and slide a spoon between the fruit and skin.

Fruit! I decided to do some bananas also…I love chocolate covered frozen bananas.

Cut the ends off the kiwi.

Slide the spoon between the fruit and skin.

Voila!

On to pin 6 Kiwi Pops.  This pin comes from Cathy at ShowFood Chef.  I’m always looking for something sweet after dinner that is somewhat healthy; this seemed perfect!

Fruit is all cut up and ready.

Insert popsicle sticks. Tip: just go to the kiwi’s center, if you try to go past that it will pierce through.

Stick the fruit in the freezer and in the mean time melt your chocolate.  I forgot to add coconut oil to the mixture but it still came out alright.  I used a 60% cacao dark chocolate.

I came up with this contraption because the chocolate didn’t harden right away (perhaps from not having the coconut oil or maybe they weren’t frozen enough).

All done!

I ended up putting the kiwis in the fridge, they really don’t need to be frozen.  I will definitely be doing this again, but I decided next time I’m just going to dip half of the kiwi’s in chocolate and forgo the popsicle sticks.  Much easier!

Pin 3 – Lasagna Cupcakes

Afternoon…I hope everyone had a great weekend! I got to see some friends I haven’t seen in a while so it was wonderful! 🙂

Today’s pin is Lasagna Cupcakes and comes from the blog The Girl Who Ate Everything.  I love lasagna, it is absolutely one of my all time favorite things to eat!  I also love cupcakes… 🙂

I stopped at Meijers to pick up a few things I needed for the recipe and they had wontons on sale but of course they were out! Our Meijers seems notorious for not having sale items.  Luckily they had egg roll wrappers…I’m not sure what the difference is (thickness?) but I figured it would probably work.

First step was to cut the wontons into circles.  I didn’t have a cookie or biscuit cutter so I had to use a glass and a knife.  I didn’t come up with the great idea of stacking more than one wrapper until the end…imagine that!

Next was to make sure the pan was nice and greased and to insert the circle cut outs.  At this point I thought that perhaps they were supposed to go in a mini-muffin pan (I pictured the wontons coming up the sides of the muffin pan.  After I started layering I knew that couldn’t be right either, so back to the normal muffin pans I went! Also, something is up with the recipe because it says you need 12 wonton wrappers but that the recipe only makes 6 cupcakes?

While I was cutting out the wontons I browned my ground beef with a little salt and pepper.

Next was the layering, since I thought the recipe was messed up I just kind of did whatever I wanted here…and yes I ran out of ground beef near the end, but honestly you couldn’t tell a difference.  I had a layer of parmesan, mozzarella, and ricotta, then a layer of ground beef and sauce, then back to the parmesan, mozzarella, and ricotta, then ground beef and sauce, and ended with mozzarella and parmesan.

Finally they are ready for the oven!

They came out great, but I will say I thought they would be crispier on the outside.  I think I could have cooked them a little longer (I had them in the oven for 18 minutes) and perhaps if I had wonton wrappers they would have been thinner.  Final thought…..they are super delicious on the 2nd and 3rd day, so make them ahead of time and heat them back up in the oven for 10 minutes!

Pin 1 – Double Crunch Honey Garlic Pork Chops

My first pin!  I decided that this would be a neat thing to blog…pins I’ve actually finished! This first pin and the next are going to be pretty bare bones since I came up with the idea after the fact, but look forward to more in depth posts about pins I’ve completed.

The first pin I completed was a recipe for Double Crunch Honey Garlic Pork Chops.  This recipe comes from a blog called Rock Recipes.  It all started with me trying to find a recipe on Pinterest for pork because I had some pork chops sitting in the fridge that needed to be used ASAP.  So I search for “pork recipes” and a bunch of pins with the name Michael came up…nothing for pork! – no idea what that’s about.  So instead I tried googling “pork recipes pinterest” and a bunch of recipes came up!! (So FYI, if you ever search for pins and the only result you get is Michael, trying googling!)  This was one of the first recipes, had a ton of pins, and sounded delicious.

This recipe was fairly easy.  Mix your spices and flour, mix your egg wash, salt & pepper the pork (I used boneless pork loin chops), dip in flour mixture – dip in egg wash – dip back in flour.  Two tips….make sure you don’t put too much oil in your pan (I did) and also use a non-stick pan if possible.  I used my stainless pan simply because it was bigger and I wanted to fit them all in at the same time and they of course kept sticking (even though I had too much oil! lol)  I cooked the pork chops for 5 minutes on each side – with the heat set at about 4 1/2.  They came out nice and juicy!  As for the sauce you dip the pork chops in afterwards – I used agave nectar instead of honey, low sodium soy sauce, and a little bit of orange juice.

This is not the healthiest recipe, but it was definitely delicious! Will be great for an every now and again dinner.
