I know it has been way too long since my last post! Things were and still are a bit crazy around here, but I found time to do a pin so I thought I’d take the time to blog about it as well.
This pin comes from Kelsey at Apple A Day. I love chips so I’m always looking for a healthy crunchy alternative, this definitely fits the bill. The only time I’ve had chickpeas is in hummus so I was looking forward to seeing what they’re like in a different form….they are yummy!
Super short ingredient list!
Rinse and drain the beans
Mix with olive oil.
Bake for 45 minutes! (wish it was faster, I’m hungry!)
Yum! I used a little less salt since the canned chickpeas I had were already salted and I added some chili powder for a little kick!

PS: I think I may need to change the name of my blog to gawktastic…lol…I actually found this recipe on foodgawker and the pinned it to pinterest!
